For the first time in a long time I won’t be watching the Super Bowl. Instead I’ll be aboard a transatlantic flight en route to Egypt - woohoo! Although I’m a bit bummed that I won’t be able to see the Steelers and Cardinals battle it out, I’m extremely excited to escape the ice and snow and head to someplace warm and totally fascinating.
I’m planning on entering a couple dispatches from the road and I’m looking forward to exploring and sharing the sites, scenes, culture, and, of course, food that I encounter - so please stay tuned!
In the meantime I thought I would compile some gameday favorites to help you plan your Super Bowl menu. Pictured above is one of my favorite gameday recipes of the year - Yip Yips or Sloppy Joes - a messy family favorite that is loaded with flavor and boosted with a good dose of veggies.
These pineapple chorizo nachos will add a bright citrus element to your Super Bowl spread (which often tends to be heavy on the meat and bread). Unless your reading this from Chile, the tomatoes that are called for in this recipe are probably not in season. An easy substitute is a quality jarred salsa; you’ll certainly get better flavor than from tomatoes that have been shipped across continents.
You can’t go wrong with a big platter of kale loaded potato skins. The nice thing about this recipe is that you can prep the skins the day before and hold them in the refrigerator; all they will need is a bit of time in the oven on gameday and they are ready to go.
If you’ve got some real gameday fans, you’ll probably want to add a bit of bacon to the spread. These dates wrapped in bacon have quickly become a go-to party recipe in my house. With crispy bacon, sweet dates and gooey cheese, it’s really not a surprise!
Speaking of gooey cheese, we have to bring in the warm spinach & artichoke dip. Serve the dip with toasted pita bread, crostini, or tortilla chips and you’ve got veggie loaded, hot-dip heaven.
I had to include this recent post: chicken wings pok pok style - I totally agree with my friend, Amy from Eggs on Sunday, who commented, “these look like perfect superbowl eats.” And if I was in town this Sunday, these wings would definitely be on my menu.
even more recipe round-ups:

Well it appears that even folks that do not enjoy football should look forward to this day for the feast alone.

Hi Tracy - I recently read that more people plan Super Bowl parties than New Year’s - I was surprised!! I think it’s the casual, fun food that brings both the football fans and everyone else together to celebrate - and of course the commercials that everyone focuses on (my least favorite part). I hope you get to indulge this Sunday & thanks for the note!!

Seriously, Sue, they ALL look like amazing super bowl eats…my mouth is watering! I’ve been thinking about those bacon-wrapped dates ever since you posted them, and I saw some nice large dates in our local market the other day, so I think those will be on the roster this weekend. Have a fantastic trip; it sounds so exciting!! Can’t wait to see pictures.

Hi Amy - You can’t go wrong with the dates - I’ve enjoyed them as a breakfast treat as well, especially when you have a busy day ahead! You can also stuff them with a toasted almond if you’d prefer a bit of a crunch in the middle. Best wishes on a fun Super Bowl Sunday!!

Hi Marianne - it’s a bit of an indulgence, but the dates are really really good.

Sue,
Great food idea’s for the “Bowl”. We’ll be hosting our regular gang at the restaurant, of which will include several Steeler’s fans, believe it our not. I’m going to make those pok pok style wings. We look forward to you joining the Burlington restaurant scene. Enjoy Egypt, it’s a destination I’ve so wanted to visit. However, my wife and I are off to Thailand in March for family, fantastic food ideas, lush warm weather and much needed R&R. Look forward to your comments on Egyptian cuisine…

Hi Daryl - Thanks for the note! I am always surprised by the amount of Steelers fans up here in VT! Totally psyched you’ll be serving the wings and I’d love to hear how they go over. Have a great trip to Thailand - it’s a great time of year to take a break from the ice and snow!
